It adds a little bit of flavor, and if done right, it can be added to many other things that you wouldn't expect, such as vegetables.. Onion, garlic and black pepper added to eggs is pretty good too. One thing I made recently was my own version of a Japanese breakfast dish called Tamagoyaki, which is basically a rolled omelet. It was delicious, and although I did not follow the recipe I found exactly, it's like the American version of an omelet, where you can kind of make your own version out of it.
