Some people don't know how to do this. It isn't unnecessary because you already know how :P To me, a lot of advanced spriting tutorials would be utterly pointless since I know how, but that doesn't mean I should get all upidy about the existence of a tutorial that contains stuff I know how to do. It's aimed at beginners who don't know how to do this, and he's walking them through the process of how to edit sprites. If you know how to edit sprites like this, of course you won't get use out of this tutorial.

Yes, quite a lot of people do not even really know how to use the "hue\saturation" tool, and the trite use "replace color", without preparing the palette for this.
